Guest guest Posted November 30, 2001 Report Share Posted November 30, 2001 * Exported from MasterCook * Rosemary Creamed Onions Recipe By : The Vegetarian Slow Cooker by Joanna White, page 75 Serving Size : 6 Preparation Time :0:00 Categories : Side Dishes Slow Cooker Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 large yellow or sweet variety onions 2 cups vegetable broth 2 tablespoons extra virgin olive oil -- up to 3 salt and pepper -- to taste 2 tablespoons chopped fresh rosemary -- or 2 tsp. dried 1 cup heavy cream Servings: 6 Take advantage of the season and use sweet onions like Walla WalIa or Vidalia if they are available. Serve these onions as an accompaniment to a nut loaf, Bulgur Pilaf with Garbanzo Beans, or White Bean Stew (see separate recipes), along with a colorful salad or steamed crisp-tender vegetables. Cut onions in half and place cut-side up in the slow cooker. Pour vegetable broth into cooker. Brush onions with olive oil and liberally sprinkle with salt and pepper. Add rosemary, cover and cook on low heat for 8 to 10 hours, until onions are tender. Pour in cream and cook for 1 hour on low heat or until cream thickens.
