Mixed Nut Loaf

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil -- (to 2 tbsp)

3 medium onions -- chopped

2 1/2 cups chopped celery

3/4 cup chopped walnuts

3/4 cup pecans or sunflower seeds -- ground into a meal

2 cups milk -- (to 2 1/2 cups)

1 1/2 teaspoons salt

1 1/2 teaspoons dried basil

1/2 teaspoon sage -- or more to taste

1 pinch pepper -- optional

3 cups fresh bread crumbs

 

Heat olive oil on medium-high heat in a skillet. Saute onions and celery for

about 5 minutes until tender. Stir in remaining ingredients, taste, and adjust

seasonings. Lightly oil the slow cooker and pour mixture in. Cook on low heat

for 6 to 8 hours or on high heat for 3 to 4 hours.

NOTES : This is a delicious alternative to meat loaf, especially when served

with Onion Gravy (page 9). I have also used this mixture as a filling to stuff

mushrooms for an appetizer. Simply stir in 1 cup frozen spinach that has been

thawed and squeezed dry, fill mushrooms with mixture, and bake for 1 hour at

350ºF.
