quinoa spoonbread

I know we can add cooked drained room temperature quinoa to a muffin mix. Can't

find the recipe i'm thinking of but I think we can add up to 1 cup per mix that

makes 12 muffins.

Quinoa Spoon Bread (Nachinka)

Amount Measure Ingredient -- Preparation Method

1 small onion -- chopped

1 cup Quinoa (NorQuin brand)

1 teaspoon sugar

4 eggs -- well beaten

1 teaspoon baking soda

1/4 pound butter or margarine

1 teaspoon salt

1 quart warm milk

1 teaspoon cinnamon

 

Fry the chopped onion in butter until golden brown. Turn the heat to low. Add

NorQuin Brand Quinoa right out of the package into the butter and mix well. Add

the sugar, salt and warm milk. Stir slowly until the quinoa starts to thicken.

 

Remove from heat. Add the well-beaten eggs and baking soda and cinnamon. Mix

well and place in a casserole dish. Bake in a 325F oven for 1 hour.
