TOFU CHERRY CHEESECAKE

3 cups graham cracker crumbs

4 Tablespoons sugar

2 Tablespoons margarine -- melted

2 1/2 cups low-fat exta firm silken tofu -- drained

1/2 cup cup soy milk

1/4 cup cup canola or safflower oil

1 Tablespoon cornstarch

1 teaspoon vanilla extract

Cherry pie filling -- as topping.

 

1) Preheat oven to 350 degrees. Use a non-stick cooking spray on a 9 inch

springform pan. Place the crumbs, sugar and melted margarine in the bottom of

the pan and mix with a fork. Press this mixture along the sides and bottom of

the pan evenly.

2) Bake for 5 minutes, then cool and set aside.

3) In a blender, combine the tofu, soy milk, oil, cornstarch and vanilla,

blending until smooth.

4) Pour this into the prepared crust and bake for 30 minutes.

5) Remove from the oven and bring to room temperature.

6) Add the cherries on top, after removing from the pan, and chill an

additional 2-3 hours.
