Guest guest Posted December 6, 2001 Report Share Posted December 6, 2001 xpost veg-recipes, mc_recipes * Exported from MasterCook * Melissa's Grated Sunchoke Latkes Recipe By :Melissa's (Specialty Foods), Los Angeles, 1996 Serving Size : 4 Preparation Time :0:00 Categories : Chanukah Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 pound Sunchokes -- scrubbed and trimmed 1 large Shallot 2 large eggs 1/2 teaspoon salt 1 pinch nutmeg -- generous White pepper -- to taste 3 tablespoons flour 3 tablespoons corn oil 2 tablespoons hazelnut oil (walnut oil or butter) Grate sunchokes and shallot on shredding blade of food processor. Blend eggs, salt, nutmeg, and white pepper in mixing bowl. Add sunchokes and flour and mix well with hands. Heat 1-1/2 Tbsp. corn oil and 1 of hazelnut oil (or other suggestions) in each of 2 very large skillets. Quickly place 6 heaping Tbsp. of the mixture in each, spacing evenly. At once flatten hard with spatula. Fry over moderate heat until nicely browned on each side, about 2 min. per side. Serve immediately. Makes 12 medium pancakes, 4-8 servings as side dish.
