Guest guest Posted December 11, 2001 Report Share Posted December 11, 2001 * Exported from MasterCook * Lite, High Protein Alfredo Sauce Recipe By : The Cooking Cardiologist, by Richard Collins, page 110 Serving Size : 8 Preparation Time :0:00 Categories : Beans And Legumes Sauces And Marinades Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 15 3/4 ounces canned great northern beans -- drained 1 clove garlic -- minced 4 tablespoons dry cultured buttermilk 2 cups Edensoy Organic Soy Beverage 1/2 teaspoon dry basil leaves pepper -- to taste 1/2 cup Romano cheese -- grated 1 tablespoon cornstarch -- up to 2 water Serving Size: 8 Place drained beans and minced garlic in the food processor, process until smooth. Place in a medium size saucepan. In a medium size bowl, blend together the dry buttermilk mix with the soy beverage until smooth. Add this to the bean mixture, blend well. Add the basil, pepper and Romano cheese. Heat over low heat until the cheese has melted, stirring constantly. In a small bowl blend together the cornstarch and water. Add to the milk mixture. Continue stirring until thicken. Serve over your favorite linguine, prepared according to package directions. I've used silken tofu as this recipe uses the beans, but this would be a great way for me to do a bean or two, since I can't stand them whole!
