Guest guest Posted December 22, 2001 Report Share Posted December 22, 2001 * Exported from MasterCook * Hot and Sour Soup with Lemongrass 2pts Recipe By :Accidental Vegan by Devra Gartenstein Serving Size : 6 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 stalks fresh lemongrass 6 lime or kaffir leaves 1 onion -- chopped 1 tablespoon grated ginger root 2 cloves garlic -- chopped 2 ripe tomatoes -- chopped 10 mushrooms -- quartered 6 cups veggie stock -- (to 8 cups) 2 tablespoons chopped fresh basil 2 tablespoons chopped fresh mint 1/2 cup coconut milk 3 tablespoons soy sauce -- (3-4 tbs) 1 tablespoon raw sugar (optional) 2 tablespoons lime juice -- (2-3 tbs) chile oil -- to taste 1. Chop the lemongrass in fairly large pieces so you can pick them out later. In medium stockpot, boil the lemongrass, lime leaves, onion, ginger, garlic, tomato and mushrooms in the stock for 30 minutes. 2. Add the remaining ingredients except the lime juice and chile oil and cook another 10 to 15 minutes. 3. Add the lime juice and chile oil, pick out the lemon grass and lime leaves and serve.
