Marinate the tofu in half the plum sauce. 2. In a medium saucepan, saute the onion, ginger and garlic in the oil and soy sauce for 5 minutes, then add the carrots and bok choy. Cook on medium heat for another 5 minutes. 3. Spread a layer of plum sauce on each tortilla, then spread a heaping tablespoon of rice and 1/2 cup of the veggie mixture. Roll and serve. [TIP - Warm the tortillas in a 250F oven for about 5 minutes; wrap immediately in foil.
