Mu Shu Veggie Rolls with Tofu Gartenstein

Amount Measure Ingredient -- Preparation Method

1/2 pound firm tofu -- cut in strips

1 recipe plum sauce

1/2 onion -- minced

1 tablespoon grated ginger root

2 cloves garlic -- minced

1 tablespoon mild olive oil

1 tablespoon soy sauce

3 carrots -- grated

1 bunch baby bok choy -- chopped

10 flour tortillas (8-inch)

3 cups cooked brown rice

 

1. Marinate the tofu in half the plum sauce.

 

2. In a medium saucepan, saute the onion, ginger and garlic in the oil and soy

sauce for 5 minutes, then add the carrots and bok choy. Cook on medium heat for

another 5 minutes.

 

3. Spread a layer of plum sauce on each tortilla, then spread a heaping

tablespoon of rice and 1/2 cup of the veggie mixture. Roll and serve.

 

[TIP - Warm the tortillas in a 250F oven for about 5 minutes; wrap immediately

in foil. They will stay warm and soft.]

1 teaspoon toasted sesame oil

 

Whisk the ingredients together. Use as a sweet and salty dip for eggrolls or

potstickers.
