Guest guest Posted January 2, 2002 Report Share Posted January 2, 2002 vegan wednesday * Exported from MasterCook * Carrot Pate or Spread ~ Vegan Recipe By :Vegan Epicure by Hermine Freed Serving Size : 8 Preparation Time :0:00 Categories : Appetizers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2/3 cup chopped onion 3 cloves garlic -- chopped 1 teaspoon olive oil 2 cups sliced carrots 1/2 cup water 1 bay leaf 3 tablespoons chopped dill pickle 1 tablespoon arrowroot -- dissolved in 1 tablespoon water 1 tablespoon agar flakes (optional) 2 tablespoons miso (optional) -- dissolved in 2 tablespoons water 1/4 teaspoon ground nutmeg 1/2 cup finely chopped walnuts (optional) MOLDED PATE: Saute onions and garlic in olive oil until soft. Add the carrots and stir for another minute. Add the water, bay leaf and cook until the carrots are tender, about 10 minutes. Remove the bay leaf and add the dill. Puree and return to the pan. Add the arrowroot, agar, nutmeg. Add miso and nuts if using. Stir until thickened. Put in a mold and refrigerate until set. SPREAD: eliminate the agar and put in a bowl.
