Guest guest Posted January 2, 2002 Report Share Posted January 2, 2002 * Exported from MasterCook * Mushroom Pate or Loaf Recipe By :Vegan Epicure by Hermine Freed Serving Size : 8 Preparation Time :0:00 Categories : Appetizers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 shallots -- chopped 4 cloves garlic -- chopped 1 teaspoon olive oil 1 pound mushrooms -- chopped 1/2 cup bread crumbs 1/4 teaspoon ground nutmeg 3 tablespoons chopped fresh tarragon 2 tablespoons arrowroot or egg substitute -- dissolved in 2 tablespoons water salt and black pepper Soak the bread crumbs in water; squeeze. Saute the shallots and garlic in olive oil until soft. Add mushrooms and cook until just getting soft. Add the bread crumbs and seasonings and mix well. Puree and return to the pan. Add the arrowroot and stir until thickened. BAKED LOAF: Put all the ingredients in an oiled bread pan, cover with aluminum foil and bake in a 350F oven for about 30 minutes. SPREAD: Serve without baking. [Editorial Comment -- The author mentions egg substitute but does not recommend one. The cookbook lists two mayonnaise recipes in the index under " egg substitutes.
