Guest guest Posted January 2, 2002 Report Share Posted January 2, 2002 * Exported from MasterCook * Spinach Pate ~ Vegan Recipe By :Vegan Epicure by Hermine Freed Serving Size : 8 Preparation Time :0:00 Categories : Appetizers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup chopped leeks 5 cloves garlic -- chopped 1 teaspoon olive oil 1 pound spinach -- washed 1 pound tofu -- mashed 2 tablespoons chopped fresh dill 1 tablespoon chopped fresh rosemary 1/2 teaspoon ground nutmeg 1/2 cup fat free soy milk 2 tablespoons arrowroot -- dissolved in 2 tablespoons water 1 tablespoon agar flakes Saute the leeks and garlic in olive oil. Steam the spinach until just wilted, a minute or two. Puree the leeks and garlic, spinach, tofu, dill, rosemary and nutmeg. Return to the pan and add soy milk and the arrowroot mixture. Stir until thickened. Add the agar flakes. Put all the ingredients into a nonstick or lightly oiled loaf pan, cover with aluminum foil, and bake for 45 minutes in a 350F or until firm throughout.
