Here is a Couscous Salad which cries for excellent harissa. I will be

posting a harissa recipe from Shulman's Best Vegetarian Recipes. So look

out for that harissa recipe.

Couscous Salad

 

Recipe By : " Off the Shelf " , published in the Denver Post

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 cups couscous

2 1/2 cups vegetable stock

2 sweet potatoes (roasted) -- diced

1 cup snowpeas (whole, blanched )

-- Dressing --

3 tablespoons olive oil

1/2 teaspoon harissa (or chili paste)

1/4 cup chopped mint

1/4 cup fresh lemon juice

1 tablespoon honey

 

Cook couscous in stock, according to package directions. Toss warm

couscous with vegetables. Combine dressing ingredients and pour over

couscous mixture. Toss and serve.

 

Serves 4.

NOTES : Adapted from " Off the Shelf, " this salad combines lightning-fast

couscous and vegetables with a spicy dressing. It's a good way to

refresh leftover vegetables — use whatever you have on hand.

 

Note: Harissa is a Tunisian hot sauce seasoned with caraway, cumin,

coriander and garlic, used as an accompaniment to couscous. Look for it

in cans or jars in Middle Eastern markets. Or substitute Thai chili

paste, available at most grocery stores.

 

Eruna.note: The original recipe calls for chicken stock which I have

replaced with vegetable stock. Also, my suggestion is to prepare harissa

yourself. It's real easy and so much tastier than store bought harissa.
