Sweet Kidney Bean Stew

Amount Measure Ingredient -- Preparation Method

4 cups cooked kidney beans -- if canned, rinse and drain

1 15 oz can pearl onions -- rinsed and drained

1 teaspoon allspice

1 teaspoon cinnamon

1 teaspoon thyme

8 ounces mushrooms -- quartered

1 cup organic raisins

2 fresh tomatoes -- diced

8 ounces tomato sauce

1/4 cup water

1 tablespoon orange zest -- plus 1 teaspoon

1 tablespoon red wine vinegar

 

Heat a little water in a soup pot, and saute the onions until just tender. Add

the spices and cook for 3 minutes.

 

Stir in the remaining ingredients, bring to a very brief boil, then reduce heat

and simmer for 40 minutes.
