Guest guest Posted January 19, 2002 Report Share Posted January 19, 2002 * Exported from MasterCook * Brown Rice Salad with Tahini Ginger Sauce Recipe By :Lisa Valantine, Serene Cuisine, Los Angeles Serving Size : 8 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 1 cup baked tofu -- Oriental Style 1/2 cup chopped yellow onion 1/2 cup chopped red bell pepper 1/2 cup sliced fresh shiitake mushrooms 1/2 cup chopped carrots 1 cup sliced bok choy (greens and stalks) 2 cups cooked brown rice 14 ounces canned red beans -- drained 1/2 cup hijiki (sea vegetable) Dressing: 1/2 cup sesame tahini 1/4 cup toasted sesame oil 2 tablespoons maple syrup 1 tablespoon tamari soy sauce 2 teaspoons grated gingerroot Combine dressing ingredients, adding a tablespoon or so of water, if the dressing is too thick. Set aside. Place hijiki in a small bowl with water to cover, and set aside. Heat oil in medium skillet, over medium heat, 1 minute. Add onions, pepper, mushrooms, and carrots. Saute 3 minutes, or until onions are translucent. Add bok choy and saute 5 minutes, stirring ocassionally. Remove from heat and set aside. Combine the rice with beans in a large mixing bowl. Add the tofu, drain and add the hijiki, and toss with vegetables and dressing. Serve chilled or at room temperature.
