Southern " Fried " Tofu

Amount Measure Ingredient -- Preparation Method

1 pound reduced fat, firm or medium-firm regular

tofu -- cut into 32 cubes

Breast of Tofu Marinade -- see recipe

Seasoned flour -- see recipe

1 cup reduced-fat soymilk or non-dairy milk

1 tablespoon nutritional yeast flakes

1 tablespoon lemon juice

pinch salt

pinch onion powder

black pepper to taste

 

Marinate the tofu cubes for at least 12 hours in Breast of Tofu

marinade.

 

Make up a dipping sauce by combining soymilk, nutritional yeast,

lemon juice, salt, onion powder, and pepper.

 

Preheat the oven to 400F. Lightly oil two dark-colored cookie

sheets. Remove the tofu cubes from the marinade, and coat with plain

flour. Dip the floured cubes in the dipping mixture, coating all

over, then roll them in the Seasoned Flour to coat. You may find

this easiest if you use two separate forks for dipping the cubes in

flour and two others for dipping in the liquid dipping mixture.

Place the cubes, not touching, on the cookie sheets. Bake for 15

minutes, then turn the cubes over and bake 15 minutes more.

 

Serve the cubes hot with gravy (or equal parts ketchup and hot salsa)

and mashed potatoes, or cold with the ketchup/salsa blend.

NOTES : Variation: Chile Chunks. These make a good appetizer. For

the Seasoned Flour, substitute 1/4 cup cornmeal for 1/4 cup of the

flour, and add 2 tsp. chile powder, 1/4 tsp. cumin, 1/4 tsp. oregano

and 1/8 tsp black pepper. For a dipping sauce, flavor Tofu Sour

Cream with salsa to taste.
