Athenian Plaka Salad

Amount Measure Ingredient -- Preparation Method

1 pound fresh green beans -- ends trimmed

DRESSING:

3 tablespoons white wine vinegar

1 tablespoon lemon juice

1 garlic clove -- minced

4 scallions (white part only) -- finely chopped

(Reserve greens for garnish)

1/3 cup finely chopped fresh mint leaves

1/3 cup chopped fresh Greek basil

1 tablespoon chopped fresh oregano

1/3 cup olive oil

salt and fresh ground pepper -- to taste

1/2 cup crumbled feta cheese

1/2 cup toasted slivered almonds

2 hard-boiled eggs -- chopped fine

GARNISH:

reserved scallion greens -- chopped

 

Combine dressing ingredients well and reserve.

 

Bring a large pot of lightly salted water to a boil. Put in green beans and cook

until just tender-crisp, about 4 to 5 minutes. Drain beans in a colander and

plunge immediately into ice water to stop cooking action. Drain on paper towels.

Mix dressing thoroughly with beans.

 

Arrange beans in a pinwheel fashion on a large platter. Mound crumbled feta in

center of platter and surround with nuts and chopped eggs and sprinkle with

scallion greens.

 

Basil, Greek " Windowbox " -- Truly a bonsai basil with compact, neat 6 to 8

inch, umbrella-shaped plants and small (1/2 inch) leaves bursting with flavor

and fragrance; has pungent peppery aroma. Stir into dishes with grains and into

dishes with rice.

traditional Mediterranean salad is a real crown pleaser. [Plaka is a tiny

village about five miles north of the town of Elounda, on Crete.]
