Fried Tofu Fingers

2 pounds extra firm tofu -- sliced in 1 inch wide strips, 2 to 3

inches long

2 teaspoons liquid smoke flavoring

1/4 cup tamari soy sauce

1/4 cup olive oil

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon ground cumin

Breading:

1 cup all-purpose flour

1 cup corn meal

1 tablespoon seasoning salt

 

First we need to extract as much water as possible from the tofu. Wrap your

blocks of tofu in doubled paper towels or clean hand clothes. Place them in a

pie dish and place an empty pot over them bottom side down or another clean flat

object. Leave them like this for about twenty to thirty minutes. Your towels

will be soaked and a good amount of water will be extracted from your tofu.

 

In a nine inch Pyrex casserole dish, mix the tamari, olive oil, garlic powder,

onion powder, liquid smoke and cumin. Place the cubes of tofu in the marinade

making sure that all the pieces are evenly coated. Marinate overnight so the

tofu will soak up all of the seasonings.

 

Next combine corn meal, flour, salt and pepper in a plastic or paper bag. Add a

couple of pieces of tofu to the bag at a time and shake the bag to make sure the

tofu is thoroughly coated. In a skillet heat oil and add the pieces of coated

tofu. Fry until golden brown.

NOTES : Remember what we said at the beginning of the chapter about how tofu and

other meat substitutes can taste as good or as bad as you make them? Well here's

an example of the right way to do it. Simple ... but delicious!
