Napa cabbage is a very pale green celery cabbage with delicate, crinkled leaves. All types of celery cabbage are popular throughout China, Japan, and Korea, but napa is the variety most commonly found here~available in most well-stocked supermarkets. The dressing, with sesame oil, mirin, and soy sauce, adds a distinctly Asian accent to this light and satisfying dish. Serves 6 to 8 Total time: 25 minutes Place the cabbage, carrots, peppers chiles, shallots, garlic and cilantro in a bowl. In a separate bowl, whisk together the dressing ingredients. Pour the dressing over the vegetables and toss thoroughly. Taste and, if needed, add a pinch of salt or more vinegar. Serve immediately or refrigerate until serving.
