Guest guest Posted January 28, 2002 Report Share Posted January 28, 2002 * Exported from MasterCook * Pizza: Spinach, Artichoke Hearts & Feta Recipe By : Moosewood Restaurant New Classics, page 340 Serving Size : 1 Preparation Time :0:00 Categories : Pizza Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups thinly sliced onions 2 minced garlic cloves -- up to 3 1 teaspoon dried dill weed 1 teaspoon salt 1 tablespoon olive oil 10 ounces spinach -- stemmed rinsed and chopped 5 artichoke hearts -- quartered (14-ounce drained can) 1/2 teaspoon ground black pepper 2 pizza crusts (see separate recipe) 2 cups crumbled feta cheese -- (optional) Yields enough for two 14-inch pizzas. In a large pot, sauté the onions, garlic, dill, and salt in the oil on medium heat until browned, about 10 minutes. Add the rinsed spinach and cook uncovered, stirring frequently, until mostly wilted. Add the artichoke heart quarters and pepper. Allow to cool for a few minutes before spreading onto the pizza crust. Top with the feta cheese, if using, and bake according to the pizza crust instructions.
