Guest guest Posted January 29, 2002 Report Share Posted January 29, 2002 * Exported from MasterCook * Chili With Vegetarian " ground Round " Recipe By :Veggie Life, Winter 2000-2001 Serving Size : 4 Preparation Time :0:00 Categories : Soups, Stews, and Chowders Vegan Winter 2000-2001 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup diced carrot 1 cup diced celery 1 cup diced green bell pepper 1 cup diced onion 2 cloves garlic -- minced 3/4 cup vegetable stock or water 2 cups chopped fresh or canned tomatoes 1 can pinto or kidney beans -- (14 ounce) drained 1 tablespoon chili powder 1 teaspoon each -- ground cumin, dried basil 1/4 teaspoon black pepper 1/2 teaspoon salt -- or to taste 12 ounces vegetarian ground round 1. In large pot, over medium-high heat sauté carrots, celery, bell pepper, onion, and garlic in stock for 5 minutes, or until vegetables are soft. Stir in tomatoes, beans, chili powder, cumin, basil, pepper and salt. Reduce heat to low, cover, and simmer over medium-low heat for 15 minutes. 2. Crumble in vegetarian ground round, stir well to combine, and cook for 3 to 5 minutes, just to heat through. Add additional salt to taste. NOTES : When iron-rich foods such as beans or vegetarian " meats " are eaten with vitamin rich foods such as tomatoes, onions and peppers, the body's absorption of iron is greatly increased.
