Chili With Vegetarian " ground Round "

1 cup diced carrot

1 cup diced celery

1 cup diced green bell pepper

1 cup diced onion

2 cloves garlic -- minced

3/4 cup vegetable stock or water

2 cups chopped fresh or canned tomatoes

1 can pinto or kidney beans -- (14 ounce) drained

1 tablespoon chili powder

1 teaspoon each -- ground cumin, dried

basil

1/4 teaspoon black pepper

1/2 teaspoon salt -- or to taste

12 ounces vegetarian ground round

 

1. In large pot, over medium-high heat sauté carrots, celery, bell pepper,

onion, and garlic in stock for 5 minutes, or until vegetables are soft.

Stir in tomatoes, beans, chili powder, cumin, basil, pepper and salt.

Reduce heat to low, cover, and simmer over medium-low heat for 15

minutes.

 

2. Crumble in vegetarian ground round, stir well to combine, and cook for

3 to 5 minutes, just to heat through. Add additional salt to taste.

NOTES : When iron-rich foods such as beans or vegetarian " meats " are eaten

with vitamin rich foods such as tomatoes, onions and peppers, the

body's absorption of iron is greatly increased. Make vegetable

stock from stock powder or cubes (available at health food stores

and many supermarkets). Look for brands that don't contain

hydrogenated fats.
