NOTES : Fran Welch, a friend and former Moosewood employee, gave us this recipe.

She's probably made

hundreds of these crusts, which come together quickly and are surprisingly easy

to roll out. Use this recipe anytime you want a vegan crust.

Lizzie's choice

During the last decade, a growing number of people have chosen to be vegans. A

vegan diet consists solely of foods from the plant world and most vegans oppose

animal slaughter and the living conditioons of most commercial livestock. So

they do not wear leather, wool, silk, shelld, feathers, pearls, or bone, and

they avoid milk, eggs, honey, meat, poultry and fish.

Here's a very familiar scenario these days. The phone rings at the restaurant.

On the other end is a very pleasant woman from New Jersey, whi is driving up for

her daughter Lizzie's birthday. Lizzie is a student at Ithaca College and they'd

like to come to Moosewood for dinner. There's just one problem - Lizzie's a

vegan. Do we have anything that Lizzie can eat and what about something that

resembles a birthday cake?

Lizzie's mom needn't worry. At Moosewood, we've seen a continuous increase in

veganism, with it's emphasis on beans and grains. There are always delicious

vegan choices on our menu: tofu or tempeh, plenty of cooked vegetables, and

fresh fruit and vegetables in the form of a salad. Vegan meals offer lots of

opportunity for creativity; they need never be dull or repetitive.

Within these pages you'll find vegan turnovers, lasgana, stroganoff, and bean

dishes galore. For breakfast, there are tofu scrambles, vegan pancakes, and

waffles, and a week's worth of " burgers " foor lunch. Dessert: Try Thai Black

Rice Pudding or Fruit Skewers. So how about Lizzie's birthday cake? No problem

- Deep Chocolate Vegan Cake with Chocolate Raspberry Glaze is always a hit. How

many candles for her cake?
