I'll turn to that book but first I need to declutter and format these Rose Elliot recipes. * Exported from MasterCook * Parkin / Rose Elliot's Recipe By :Rose Elliot Serving Size : 16 Preparation Time :0:00 Categories : Desserts New Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup whole wheat flour 2 teaspoons baking powder 2 teaspoons ground ginger 1 1/3 cups rolled oats 1/2 cup dark brown (molasses) sugar 1/2 cup black molasses 1/2 cup honey or corn syrup 1/2 cup butter or pure vegetable margarine 3/4 cup milk or soy milk Set the oven to 350 degrees F. Line an 8-inch square cake pan with wax paper. Sift the whole wheat flour, baking powder, and ground ginger into a bowl, adding the bran left in the sifter, and also the rolled oats. Now put the sugar, molasses, honey or corn syrup, and butter or margarine into a saucepan and heat gently until melted. Let cool until you can comfortably put your hand against the saucepan, then add the milk or soy milk. Add this mixture to the dry ingredients, mixing well, and pour into the prepared cake pan. Bake for 50-60 minutes, until firm to the touch. Lift the parkin out of the cake pan and put on a wire rack to cool, then cut into pieces and remove from the paper.
