Guest guest Posted February 7, 2002 Report Share Posted February 7, 2002 * Exported from MasterCook * Tofu Burgers and " Meatballs " Recipe By :Moosewood Collective Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons vegetable oil 1 large onion -- finely chopped 1 large carrot -- grated 1 green pepper -- finely chopped 1 1/2 teaspoons dried basil 2 large eggs* 1 cup bread crumbs 3/4 cup walnuts -- ground or finely chopped 1/4 cup chopped fresh parsley 1 tablespoon Dijon mustard 1 1/2 tablespoons dark sesame oil 3 tablespoons tamari soy sauce black pepper -- to taste 3 cakes tofu -- pressed Yields 6 large burgers Tofu burgers may sound like the early days of '60s vegetarian cooking, when imitation meat was all the rage. But in fact, these burgers are absolutely delicious and are one of our most popular standard lunch items. We know lots of kids who gladly devour tofu burgers and " meatballs. " Saute the vegetables and basil in oil until tender, about 10 minutes. In a large bowl, lightly beat the eggs, then add the bread crumbs, walnuts, and remaining ingredients. Mash the pressed tofu either with a potato masher or your hands and add it to the bowl, along with the sauteed vegetables. Stir well; the mixture should be firm enough to form into patties. Pat the mixture into 6 large " burgers. " Bake on an oiled baking sheet at 375F until golden brown on the outside, but still moist inside, about 30 minutes. Serve with Russian Dressing (p. 57) or ketchup, tomato slices, lettuce, pickles, chips, and sprouts on whole wheat or rye toast. Tofu " Meatballs " : For about 3 dozen balls, add the following ingredients to the basic burger mix: 3 garlic cloves, minced, I teaspoon ground fennel seed, 3/4 teaspoon dried oregano, and an additional 1 1/2 teaspoons Dijon mustard. Form 1 1/2-inch balls and bake at 350F on an oiled baking sheet for 20 to 30 minutes. When that urge for a submarine sandwich hits, stuff some pita or Italian bread with lettuce, bermuda onions, and Tofu " Meatballs " doused with tomato sauce. Or use them to top off spaghetti with tomato sauce and gated Parmesan cheese. *For an eggless version, omit the eggs and add the juice of 1 lemon and 1/4 cup tahini (see Appendix). Reduce the tamari soy sauce to 2 tablespoons and increase the bread crumbs to 1 1/4 cups. I like Moosewood's food because it's fresh and homemade-tasting. I like their chocolate cake.
