Tofu Pesto

Amount Measure Ingredient -- Preparation Method

2 medium tomatoes -- chopped

6 garlic cloves -- pressed

4 cups firmly packed fresh basil leaves -- chopped

1 cup olive oil

1 1/2 cakes tofu -- pressed, cubed, and blanched

1 teaspoon salt

1 tablespoon miso

1 tablespoon fresh lemon juice

1 1/2 cups almonds -- chopped

 

Serves 8 to 10 generously

This unconventional pesto is high in protein and is a non-dairy version that is

creamy and delicious.

 

This sauce can be made either in a food processor or blender. Puree the tomatoes

and garlic until smooth. Add the basil and olive oil and blend. Add all of the

remaining ingredients and puree until the sauce is smooth and creamy.
