Ooey-Gooey Caramel Chip Bars

Caramel Center:

2 cups vanilla soy milk

1/2 cup unrefined sugar

pinch sea salt

2 teaspoons water -- (2 to 3)

2 teaspoons arrowroot powder

Graham Cracker BottomL

1 cup graham cracker crumbs -- (see sidebar)

1/2 cup quick oats

few pinches sea salt

1 1/2 tablespoons honey option -- (brown rice syrup, barley malt or agave

nectar, or honey)

1 tablespoon pure maple syrup

1 1/2 tablespoons canola oil

Topping:

2 tablespoons unsweetened shredded coconut

3 tablespoons non-dairy chocolate chips -- (3 to 4)

 

Sidebars:

I use low-fat graham crackers and grind them in a food processor, to make my own

crumbs.

 

Using parchment paper in this recipe really helps after it has baked. Once you

are ready to cut it into squares, simply lift it onto a cutting board using the

paper, and gently peel the paper away.

 

For caramel center: in a saucepan over medium-high heat, combine soy milk,

sugar, and salt. Bring to a boil, then reduce heat to medium-low and simmer,

stirring occasionally, for 30-40 minutes. Mixture should be thick and

caramelized, and reduced to about 1 cup. Mix the water with the arrowroot,

stirring to a smooth consistency Slowly stir arrowroot mixture into saucepan,

mixing well, and bring back to a low boil. Remove from heat and stir in vanilla.

Preheat oven to 350F. In a bowl, combine ingredients for graham cracker bottom,

working mixture with your fingers until well combined. Press mixture evenly into

an 8 " x8 " pan lined with parchment paper, or lightly oiled (see sidebar). Pour

caramel evenly on crust, sprinkle on shredded coconut and chocolate chips, and

bake for 18-21 minutes, until coconut is golden and caramel is bubbling in

spots. Let cool, and cut into squares. Makes 12-16 squares.

 

For 16 squares, per square. Calories: 116; Total Fat: 4.2 g (Sat. Fat: 1.4 g);

Cholesterol: 0 mg; Carbohydrate: 17.9 g; Fiber: 1.2 g; Protein: 2 g.
