I'm slowing converting over to the vege-life style. We are a family

that has been living on fast food, high-fat cooking, and a meat at

every meal. I'm really making an effort, I swear!

I went to my first organic farmer's market on Sat morning and had a

BLAST. It's like I can't wait to get home and eat my produce.

 

ANYWAY.

The problem I'm having is with my kids. They want no part of any

veges...well my son will eat healthy. But he's picky on the timing.

He's 3. My daughter is 5 and will not touch a vegetable. I had to bribe

her with chocolate once to eat some sweet sauted carrots. I think that

may be the only fresh vege she's ever eat'n.

So, do any of you have any advice on where to start? Shall I just

starve them into it? What foods should I introduce to them first?

After living on junk food your kids' bodies may have forgotten to

crave real food.

 

You can try giving your kids a multivitamin. I've seen some kids

start to cut down on the junk food and ask for healthy food. I

guess the vitamins sort of reteach their bodies to crave what they

really need.

 

Some suggestions for foods they might be willing to try:

 

Make a veg. soup, then blend it with milk or cream (sorry guys this

is for kids - I normally cream with soy milk...) That's how I got my

picky eater son to eat soup. Eventually I blended less till today

all my kids eat soup with all the pieces.

 

Blend a fruit shake (bananas and any other fruit they like with

water or milk) and you can add a powder of barley grass. You can

call it a Shrek Shake. One of those and you really don't have to

worry about how many vegetables they are getting for the rest of the

day.

 

If they liked fast food fries - try to make your own in a baked

version. If that works you can also add carrot and sweet potato

fries.

How about a zucchini/carrot cake with walnuts and

raisins made with whole wheat flour and oatmeal?

Lesseee.... my kids are 9 & 5. Although we're not strictly vegetarian, we eat a

lot of vegetarian meals. I'm lucky for one, that my kids love veggies. But,

making a rice & veggie stir fry, toss roasted veggies w/pasta might work.

 

How do you prepare your veggies? I personally think roasting them makes them

yummiest - toss w/olive oil & shove into a 400F oven for 20-30 mins DEPENDING on

the vegetable! Sprinkle w/salt & voila.

 

I either marinate or sprinkle with seasoning blend extra firm tofu, cut it

into cubes & roast that. We like the firmer texture added to whatever. Bean

dishes are good too. White bean chili, baked beans. There's a soup recipe in

here or vegetarian spics called 'All the Reds' or similar & it has red beans,

red onions, red..... & is good.

 

Stir frying vegetables & adding ginger, garlic and/or soy is yummy, too.

Look for Pat's eggplant recipe.....Burgundy eggplant? noo.....help me folks...

it's a stellar recipe. MAHOGANY EGGPLANT @ www..com. Helen's

spicy millet is a staple here, now, lol. You can always adjust the heat!

 

I find variety is key. And I flat out REFUSE to prepare more than 1 meal.

Eat what's available or don't. There's bazillions of recipes here. Happy
