Guest guest Posted January 10, 2006 Report Share Posted January 10, 2006 Weight Watchers Winner's Circle Cookbook Honorable Mention Jon McDunn, Poway, CA Soft Tacos with Goat Cheese and Mango Salsa 1 ripe mango, peeled and cubed 1 cup canned black beans, rinsed and drained 1/2 cup red bell pepper, seeded and diced 1/4 cup chopped fresh cilantro 3 scallions, finely chopped 1 tablespoon fresh lime juice 1 tablespoon honey 1/4 teaspoon salt 4 (8-inch) fat-free flour tortillas, warmed 1/4 cup crumbled reduced-fat goat cheese 1. Combine the mango, beans, bell pepper, cilantro, scallions, lime juice, honey, and salt in a large bowl 2. Spoon a generous 1/2 cup of mango mixture onto each warmed tortilla. Sprinkle each with 1 tablespoon of the goat cheese. Roll up the tortillas, then cut each diagonally in half Makes 4 Servings Per Serving (1 taco): 240 Cal. 5 g Fat, 2 g Sat Fat. 0 g Trans Fat. 3 mg Chol, 367 mg Sod, 40 g Carb, 7 g Fib, 10 g Prot, 352 mg Calc. POINTS value: 4. tip: To warm the tortillas, place on a microwavable plate. Cover with a damp paper towel and microwave on High for about a minute.
