Soft Tacos with Goat Cheese and Mango Salsa

 

1 ripe mango, peeled and cubed

 

1 cup canned black beans, rinsed and drained

 

1/2 cup red bell pepper, seeded and diced

 

1/4 cup chopped fresh cilantro

 

3 scallions, finely chopped

 

1 tablespoon fresh lime juice

 

1 tablespoon honey

 

1/4 teaspoon salt

 

4 (8-inch) fat-free flour tortillas, warmed

 

1/4 cup crumbled reduced-fat goat cheese

 

1. Combine the mango, beans, bell pepper, cilantro, scallions, lime

juice, honey, and salt in a large bowl

 

2. Spoon a generous 1/2 cup of mango mixture onto each warmed

tortilla. Sprinkle each with 1 tablespoon of the goat cheese. Roll

up the tortillas, then cut each diagonally in half

 

Makes 4 Servings

 

Per Serving (1 taco): 240 Cal. 5 g Fat, 2 g Sat Fat. 0 g Trans Fat.

tip: To warm the tortillas, place on a microwavable plate. Cover

with a damp paper towel and microwave on High for about a minute.
