Guest guest Posted January 24, 2006 Report Share Posted January 24, 2006 About 20 years ago, someone brought a broccoli and rice casserole to church pot-luck. I have tried to duplicate that recipe and this is what I came up with. 1/2 stick butter, melted 2 cups hot water 2 cans cream of mushroom soup 1 jar Ragu Double Cheese sauce a little onion powder, black pepper, thyme and basil 2 cups instant rice (dry) 1 lb bag of frozen broccoli Preheat oven to 350 degrees. In a large casserole, mix melted butter, hot water, soup and cheese sauce. Sprinkle with seasonings, as desired. Stir in rice; then stir in broccoli. Bake, uncovered, for 35 to 45 minutes until heated through and rice is tender. This is one of the few recipes that all 4 of my kids love.
