It's often on chicken or veal, but I used to find it at a restaurant in St. Augustine served on tofu and it was soooo good, and I love capers. The butter/margarine is optional. The small amount of fat is 2 Tbs of olive oil. I don't think it would hurt the recipe to use low-fat tofu. I love capers and I love lemon - but it's all the butter/margarine that goes with it that usually turns me off that sauce (not just for health, but for taste). This one looks just right!
