Another fave in this house is roasted pineapple - break off the top, roast in a pan for about 1 hour at 375F. Cut up & serve. I served it with pineapple ice last weekend - mmmmmmmmmmmm. curried bananas...no clue where the recipe is at this point but as i recall....melt 2TB butter, add some curry powder then add peeled & halved(lengthwise) bananas. Cook for a few minutes then eat. They get kinda meltey ooey, gooey & yummynummy. Heehee...Nicole (6) had grapes & whipped cream the other night. Satisfied her sweet tooth. We usually serve fruit for dessert - or sometimes I actually make/bake something if people are coming! But one of the two has just been diagnosed pre-diabetic as of the end of last year and has yet to do anything about her diet. Now I know it's not up to me to police her, to put her on a diet or whatever, And I won't try to do that. But I'd feel rotten offering her something too OTT that she really cannot have. Waddaya think? This banana recipe has no added sugar, and I could use the teeniest smidge of curry powder (yup, got some of that for these kinds of needs) so that it won't overwhelm them (though they like curries). I know bananas are not good for her, but all I know that she has cut down on is the number of cookies she eats <sigh> so she'd probably help herself to the fruitbowl anyway. Of course, I could just serve the fruit bowl and let her help herself and then feel guilt free . . . But I'd still like to try the bananas for our own sake! Sooooo, how do I cook these. Roasted? or in a pan on the stovetop? I think you mean roasted, since that's the theme of your post. I'll see what I can think of to fancy the dessert plate up a bit too! This will really help. I hope they'll keep once they're cooked. Talking about cats and their unusual food likes. One of mine goes crazy for sweet corn. He tries to grab the husk and chew on it. Once it's cooked, I have to cut off some of the kernels for him to eat, and when those are eaten (all too quickly) he wants the cobs. I've been enjoying my lunches this week. I made a tofu sandwich spread using packaged tofu roasted with sun dried tomatoes. I blended that with some soy " mayonnaise " and some grated carrots. Then I made wraps using flourless sprouted tortillas. Is that the Ezekiel bread that was mentioned recently?
