We've made in twice so far and will make it again. It says to marinate the cucumber for an hour, but both times we only waited about 45 minutes and it was fine. I would recommend getting fresh, local tomatoes if you can as they are less seedy and taste soooooooo much better. Enjoy cuz it's super yummy! Cindi Tomato Cucumber Salad with Mint Ingredients: 1/3 cup red wine vinegar 1 tbls white sugar 1 tsp salt 2 lg cucumbers, peeled, seeded and cut into 1/2 " slices 3 lg tomatoes, seeded & chopped 2/3 cup chopped red onion 1/2 cup chopped fresh mint 2 tbls olive oil salt & pepper to taste Directions: 1) In a large bowl, combine vinegar, sugar, and salt. Mix in cucumbers and marinate for 1 hour, stirring occasionally. 2) Gently toss tomatoes, onion, mint and olive oil with the marinated cucumbers. Season with salt and pepper. They usually have at least a few recipes in each issue we'll use (they have more of course, but we don't use them all!) Glad you got some freebies and a couple free issues! We have issues from years ago we'll go pull out to see if anything strikes our fancy when we're doing our meal planning for the week. We try to pick out recipes for the week, go to the Farmers Market on Saturday morning to get what we can and then hit the grocery store for the rest. It's so nice to just get what you need and have it planned out instead of just, ooo, that looks good (which is what we used to do...) :-) We're lucky in that we have 2 Markets a week, one Sat & one on Wed; that way we only have to buy like 1/2 the veggies at a time so they're fresher for meals later in the week! If you or anyone else see something on my blog that you'd like the recipe for, just let me know! (Even though I know not all of them would be considered appropriate for " slimming " , a lot are!)
