I had a good restful weekend, got some needed cleaning done, went for a ride on Sunday (yes...splurged on GAS!). It was hard watching all the memorials yesterday, so I watched what I could and reflected quietly on how lucky I am to be alive. I am keeping on focusing on " There is no problem that will be solved by eating. " I have a tendancy to eat/binge on whatever...especially sweets..even the diet type. I bought some s/f f/f Jello pudding snacks and I'm proud to say I still have some in my frig (bought last THURS!) Usually, they would have been gone by Fri. So...I'm feeling pretty good. They are diffcult to grow in this area, but I believe so strongly on how good they are for us. I have three nowand plan on planting about ten more Just returned from a nice walk with my wonderful Guide dog, Midas. Carri, nothing like a nice walk to cheer one up. My mother, sister and I went to Branson, Missouri for five days, and I had a very difficult time finding vegetarian meals in the restaurants. I finally began ordering a baked potato and vegetable. In a large bowl toss squash with oil until coated well and spread in one layer in pans. Roast squash in oven 10 minutes and season with salt. Stir squash and roast for 10 to 15 minutes more, or until tender and beginning to turn golden. While squash is roasting, in a saucepan bring milk to a simmer with rosemary. Heat milk mixture over low heat 10 minutes and pour through a sieve into a large pitcher or measuring cup. In a large heavy saucepan cook garlic in butter over moderately low heat, stirring until softened. Stir in flour and cook roux, stirring for about three minutes. Remove pan from heat and whisk in milk mixture in a stream until smooth. Return pan to heat and simmer sauce, whisking occasionally--about 10 minutes--or until thick. Stir in squash and salt and pepper to taste. Sauce may be made three days ahead and chilled, if its surface is covered with plastic wrap. Reduce temperature to 375 degrees and butter a baking dish, 13- x 9- x 2-inches. Pour one cup sauce into baking dish (sauce will not cover bottom completely) and cover with three lasagna sheets, making sure they do not touch each other. Spread half of remaining sauce over pasta and sprinkle with 1/2 cup Parmesan. Make one more layer in same manner, beginning and ending with pasta. In a bowl with an electric mixer beat cream with salt until it holds soft peaks and spread evenly over top pasta layer, making sure pasta is completely covered. Sprinkle remaining 1/3 cup Parmesan over cream. Cover dish tightly with foil, tenting slightly to prevent foil from touching top layer, and bake in the middle of the oven for 30 minutes. Remove foil and bake lasagna for 10 minutes more, or until top is bubbling and golden. Let lasagna stand for five minutes. Garnish each serving with rosemary. Yield: 6 servings as a main course or 12 as a side dish Prep Time: 20 min. I love the idea of your blueberry bed - used to gather those wild when I was young - along with wild sakatoon berries, although wild was the only kind of saskatoon back then. Do you plan to make them into preserves, or pies, or gobble them down with sugar and cream????? Yum! You can freeze them of course. Then you can afford to buy the truly enooooooormously expensive berries. We can pick bilberries in the wild, a close relative. But at the moment blackberries are bursting and crying out to be picked. I'm always amazed how long it takes to fill just the bottom of a basket with berries. You set out with eager exuberance, get scratched, covered with cobwebs - say boo to the moocows - and still the bottom isnt covered. But suddenly I had too much and made an enormous crumble with wholemeal flour, Pure Marg, demarara sugar, lemon juice squeezed on Bramley apple slices and thrown into the oven until I couldn't stand the aroma any more. Yummy. I hae some left. Anyone coming round? It is a bit cooler over there and stil lnot a bad communte for my husband to go to work. Then I will be out in the middle of nowwhere with some land to work with. LOL! Pat, the feeling that you get when he does something to prevent you from getting a terrible injury or even taking you around maybe a stick lying across the sidewalk, they are just amazing. I started gardening after I was blinded and I really enjoy it, to the point of being kind of a bore, smile. I have been eating blueberries, dried and frozen every morning.
