I would love someone to share their idea of a tasty vegetarian lasagna

that isn't too full of calories. Do you know of one?

Hi Carri,

Quiet group today. I had a good restful weekend, got some needed cleaning

done, went for a ride on Sunday (yes...splurged on GAS!). It was hard

watching all the memorials yesterday, so I watched what I could and

reflected quietly on how lucky I am to be alive. I am keeping on focusing

on " There is no problem that will be solved by eating. " I have a tendancy

to eat/binge on whatever...especially sweets..even the diet type. I bought

some s/f f/f Jello pudding snacks and I'm proud to say I still have some in

my frig (bought last THURS!) Usually, they would have been gone by Fri.

So...I'm feeling pretty good.

Hope you are doing well

This one we made was really good! It came from an article in Vegetarian Times

about low-cal lasagnas. Here's a link to a pic on my cooking blog.

html

If you'd like, I can type up the recipe later. (Granted I can find the

magazine since we just moved a couple weeks ago!)

I remember looking at it again after we started Weight Watchers and it looked

ok to make for that as well but we're in bad need of a food processor so haven't

made it again yet.

an addendum to my last post...the lasagna we had didn't have cheese. And being

a big cheese-head myself, I was leery, but I loved it! :-)

Yesterday was hard. There is a memorial here where

they set up 3000 huge flags for everyone who passed on

9/11. Amazing. Glad you are doing better on your

binging. What are some good veggie low fat snacks that

you have?

Alive and really well! The weather has cooled and I have been outside working

on my new Blueberry bed. They are diffcult to grow in this area, but I believe

so strongly on how good they are for us. I have three nowand plan on planting

about ten more

Just returned from a nice walk with my wonderful Guide dog, Midas. Carri,

nothing like a nice walk to cheer one up.

Hi Everyone,

Ralph's response from Missouri prompts me to remark on my recent trip

there. My mother, sister and I went to Branson, Missouri for five days,

and I had a very difficult time finding vegetarian meals in the

restaurants. I finally began ordering a baked potato and vegetable.

What do the rest of you do when there are no veg options on a menu?

Thanks for emailing this out. I am going to try it. I will let everyone know how

it goes.

Does anyone have any PESTO recipes?

Try this!

Roasted Butternut Squash, Rosemary and Garlic Lasagna

Recipe courtesy of Gourmet Magazine

Distributed by Scripps Howard News Service

Ingredients:

3 lbs. butternut squash, quartered, seeded, peeled,

and cut into 1/2:dice (about 9-1/2 cups)

3 Tbs. vegetable oil

4 cups milk

2 Tbs. dried rosemary, crumbled

1 Tbs. minced garlic

1/2 stick (1/4 cup) unsalted butter

4 Tbs. all-purpose flour

nine 7- x 3-1/2-inch sheets dry no-boil lasagna pasta

1-1/3 cups freshly grated Parmesan (about 5 oz.)

1 cup heavy cream

1/2 tsp. salt fresh rosemary sprigs for garnish

Preparation:

Preheat oven to 450 degrees and oil two large shallow

baking pans.

In a large bowl toss squash with oil until coated well

and spread in one layer in pans. Roast squash in oven

10 minutes and season with salt. Stir squash and roast

for 10 to 15 minutes more, or until tender and

beginning to turn golden.

While squash is roasting, in a saucepan bring milk to

a simmer with rosemary. Heat milk mixture over low

heat 10 minutes and pour through a sieve into a large

pitcher or measuring cup.

In a large heavy saucepan cook garlic in butter over

moderately low heat, stirring until softened. Stir in

flour and cook roux, stirring for about three minutes.

Remove pan from heat and whisk in milk mixture in a

stream until smooth. Return pan to heat and simmer

sauce, whisking occasionally--about 10 minutes--or

until thick. Stir in squash and salt and pepper to

taste. Sauce may be made three days ahead and chilled,

if its surface is covered with plastic wrap.

Reduce temperature to 375 degrees and butter a baking

dish, 13- x 9- x 2-inches.

Pour one cup sauce into baking dish (sauce will not

cover bottom completely) and cover with three lasagna

sheets, making sure they do not touch each other.

Spread half of remaining sauce over pasta and sprinkle

with 1/2 cup Parmesan. Make one more layer in same

manner, beginning and ending with pasta. In a bowl

with an electric mixer beat cream with salt until it

holds soft peaks and spread evenly over top pasta

layer, making sure pasta is completely covered.

Sprinkle remaining 1/3 cup Parmesan over cream. Cover

dish tightly with foil, tenting slightly to prevent

foil from touching top layer, and bake in the middle

of the oven for 30 minutes. Remove foil and bake

lasagna for 10 minutes more, or until top is bubbling

and golden. Let lasagna stand for five minutes.

Garnish each serving with rosemary.

Yield: 6 servings as a main course or 12 as a side

dish

Prep Time: 20 min.

Cook Time: 1 hour, 15 min.

Cindy,

The vegetarian lasagna looks good! I'm also interested in recipes with soy

cheese as I'm now vegan. I'll try the VT website, since I'm a r now.

If I find it, I'll post the recipe.

thanks!

Hi Carri,

No, nobody here... just me. ;-| ...so I know how you feel...

Highlight of the last few days was making a stew based on the " Moroccan

Potato & Lemon Casserole " that Pat posted a few weeks ago. Yummy!

Hi Ralph - Long time no see! I love the idea of your blueberry bed - used to

gather those

wild when I was young - along with wild sakatoon berries, although wild was the

only kind

of saskatoon back then. Do you plan to make them into preserves, or pies, or

gobble them

down with sugar and cream????? Yum! You can freeze them of course.

Have to ask about your guide dog Midas - love the name - is he a golden by

chance? Or is

it just that he is pure gold to you?

Thanks for writing in. Please let us hear from you more often!

Best love, Pat

In Britain the only way to make a blueberry pie is to start by

selling your wife on ebay. Then you can afford to buy the truly

enooooooormously expensive berries. We can pick bilberries in the

wild, a close relative. But at the moment blackberries are bursting

and crying out to be picked.

I'm always amazed how long it takes to fill just the bottom of a

basket with berries. You set out with eager exuberance, get

scratched, covered with cobwebs - say boo to the moocows - and still

the bottom isnt covered. But suddenly I had too much and made an

enormous crumble with wholemeal flour, Pure Marg, demarara sugar,

lemon juice squeezed on Bramley apple slices and thrown into the

oven until I couldn't stand the aroma any more.

Yummy. I hae some left. Anyone coming round?

Pat Only you would know the love and respect that I have for this wonderful

Yellow Lab. Pat, the feeling that you get when he does something to prevent

you from getting a terrible injury or even taking you around maybe a stick

lying across the sidewalk, they are just amazing.

I started gardening after I was blinded and I really enjoy it, to the point of

being kind of a bore, smile. I have been eating blueberries, dried and frozen

every morning. I really like pumpkin seeds and dried blueberries as a great

snack.
