Today is brown rice with something over it. Probably barbecue beans from one of the McDougall recipe books. It's simple, I saute a big sweet onion in water until soft, add a can of vegetarian baked beans, a can or two of black beans and pinto beans, and a blob of prepared mustard and about 1/3 cup barbecue sauce and maybe a tablespoon of brown sugar. Heat through and eat over rice or potatoes or on salad - but my salads are usually raw spinach and I no longer have any due to the problems there have been with it. Supper is going to be split pea soup from Lorna Sass's Great Vegetarian Cooking Under Pressure, my favorite book so far. I might also make the cabbage slaw with asian peanut dressing from the Shortcut vegetarian cookbook, same author. I use less peanut butter and more rice wine vinegar than the recipe calls for. I'm newly returned with a vigor to my low fat vegetarian diet. I've been on vacation and taking life easy and eating things I normally don't and I just don't feel well. Yesterday, a woman who was maybe 40 pounds heavier than me was telling me she is going to have bariatric surgery next month, and it stunned me speechless. She said she's doing it because she's tried everything else and nothing " works " and she is afraid of dying like a relative did. She has some minor health problems related to her weight so thinks this will fix it. She's been told that this surgery will solve all of her problems, but she had no idea of the extreme changes she would have to make after the surgery. She thought my mostly vegan diet was way too radical. Like I said, I'm returned with a vigor to my diet! The conversation with this person was like a kick in the pants, just what I needed. For snacks today at work I have a banana, an apple and a couple rice cakes. It's always nice to have a variety of choices! My partner Kymberli took leftover Half-Day Ratatouille we made in the slow cooker yesterday. I'll have to post the recipe for you all as it was quite flavorful and yummy! And low-cal! Guest guest Posted September 18, 2006 Report Share Posted September 18, 2006 Gado Gado (a bit like that " Asian Peanut Dressing " I guess) with string beans and bean sprouts and a few fried potatoes. Also some nasi goreng (fried rice) and a tofu stir fry and some salad. All quite slimming I guess (could have had boiled instead of fried potatoes). Guest guest Posted September 18, 2006 Report Share Posted September 18, 2006 I have a big yummy salad (no spinach, just arugula and boston lettuce) with mushrooms, red pepper, cukes, black beans, corn, and Cindy's rosemary garlic dressing (fairly low-fat, no sugar). It's a pretty good one, with at least three choices of beans daily, and the usual greens, tomatoes, cucumbers, mushrooms, olives, etc. Most days I skip the cheese and salad dressing. We are having home made soup - butternut squash, potato, onion with some added herbs. Fresh whole grain bread from the bread machine to complete the meal. The weather is certainly telling me that today is a good day for a big bowl of steaming soup - MMMMMMMMM!! The house smells wonderful too with the smell of the soup and the 'almost ready' bread.
