Guest guest Posted September 28, 2006 Report Share Posted September 28, 2006 Well last year we went to visit my folks for Thanksgiving and had this same quandry. We bought the holiday issue of Vegetarian Times and it had this delicious Roasted Veggie Cornucopia recipe in it. Luckily I was able to give my mom the ingredient list and she picked up most of the stuff (except the fresh herbs, etc.). It worked out great as we made our dish as she made the main dish. One of my aunts is a vegetarian, previously unknown to me, so she was very pleased she had a veggie option as well! My dad even helped us with the cornucopia part (rolled up pastry puffs in shapes of cornucopias). Guest guest Posted September 28, 2006 Report Share Posted September 28, 2006 I have a smoked " turkey " wreath that I make, along with stuffed acorn squash. The wreath is unfortunately not vegan, because it uses the Pillsbury crescent rolls. I will try to post the recipe this week end, if I don't someone toss something at me to remind me. The wreath recipe comes from a Pampered Chef recipe that I have adapted. The stuffed squash recipe comes from a cook book at home. I will of course give credit to the original authors! This year though my sister, non cook, doesn't want me to cook, she wants to go out for Chinese. She and I are both veg but our partners are not, and since she drives 8 hours to get here she wants the whole time to visit. There are many recipes out there for the holidays.
