Discussion Question: Fall foods

Hi all ~

 

I thought we could try having a weekly discussion question to spark ideas and

conversation amongst the members. So without further ado....

 

What are your favorite foods during fall/autumn? Could be certain spices,

recipes, comfort foods, etc...

Hi All,

 

Here's something I love to do in the fall. First I make brown rice and

throw in a few things that I have in the house, a little onion and

celery, nuts and raisins, whatever sounds good. Then, I cut an acorn

squash in half and stuff each side with the brown rice mixture. Bake it

for 30-45 minutes and it's delicious. :-) Some people brush the squash

with a little oil or butter to keep it from getting too dry, but if

you're trying to cut back on oil, that's not necessary.

Fall Foods ~

 

Hands down, chowders and biscuits or bread. Yum. For definition, to me a

chowder is a thick soup. I used to love the flavor of clam chowder when I ate

it, though I spent much time picking out the clams even with I did eat meat! It

was the texture.

 

But I can dig into split pea, vegetable, potato, corn, etc.... as long as it is

thick, hot and yummy.

 

I realize I did not post the recipes this week end, so I will try to do that

this week, and I will add a white bean and kale soup (chowder) recipe that is

yummy!

My favorites are walnuts and/or pine nuts. :-)

That sounds good (except the raisin part, neither myself nor my partner are fond

of them!). You could get all sorts of creative with what you add to the rice

" stuffing " .

If you're looking to slim down, just be careful how many nuts you'd use as they

tend to be pretty high cal. But oh so good! Pine nuts would be yummy in that,

you're right!

Yesterday I was discussing with a friend her ** stew, and I remembered how good

it used to be. Are there some good veggie stew recipes out there? (Especially

using the " heavier " vegetables, such as potatoes, carrots, etc.)

I guess this kind of question points out why we are on this slimming group

together. Just like you, I tend to like the starchier vegetables. The

starchy vegetables, with their fiber content, are a big improvement over

pasta, and baked goods and recipes with sugar and other simple sugars.

However, when we eat more of the vegetables that are not so heavy (salads,

lighter stews, etc.), or that have more protein (eg. beans) we will have

better luck losing weight.

 

 

 

In my case I need to reduce portion sizes, and have less starch. I have 30

or so pounds to go.
