" There are lots of ways to make vegetarian gravy, but gravy tends not to be slimming. It is for special occasions. Gravy is usually made from fat, starch and liquid. Good Gravy From " The Vegetarian Meat and Potatoes Cookbook " by Robin Robertson 2 c vegetable stock 2 1/ 2 Tbs soy sauce 1/2 tsp dried thyme salt and pepper 2 Tbs cornstarch, dissolved in 3 Tbs water 1/4 c soy milk Combine stock, soy sauce, thyme, salt and pepper, heat to boiling. Reduce heat. Whisk in cornstarch mixture and whisk until thick. Remove from heat and add soy milk. ========================== Tangy Mushroom Sauce from " The New McDougall Cookbook " by John McDougall, MD and Mary McDougall 1/4 pound mushrooms (8 large), sliced 1 leek, washed and sliced 2 cups water 1 Tbs soy sauce 1/4 tsp parsley flakes 1/4 tsp dried oregano 1/8 tsp paprika freshly ground white pepper 2 Tbs cornstarch Saute the mushrooms and leek in 1/2 cup of the water for 5 minutes. Add an additional cup of water and all the seasonings. Cook over low heat for 15 minutes. Mix the cornstarch in the remaining 1/2 cup of water. Slowly add to the sauce while stirring. Cook, stirring, until thickened and clear. ================== Savory Mushroom Gravy from " The New McDougall Cookbook " by John McDougall, MD and Mary McDougall 1 3/4 cups vegetable broth or water 4 Tbs barley miso (red of traditional) 1 onion, chopped 2 cups sliced mushrooms (about 1/2 pound) 2 - 3 tsp dried sage 2 tsp dried thyme 4 Tbs arrowroot, dissolved in 1/4 cups water dash freshly ground pepper Bring the broth or water to a boil. Spoon the miso into the boiling liquid and stir to dissolve. Add the onion, mushrooms, sage, and thyme. Simmer for 15 - 20 minutes, stirring occcaisionally. Add the dissolved arrowroot to the mixture. Stir until thickened, about 5 minutes. Add a dash of fresh pepper and more miso if a stronger gravy taste is desired. ================== Rich Brown Gravy from " Vegan Vittles " by Joanne Stepaniak 2 Tbs cornstarch 3 Tbs soy sauce 1 1/2 cups water 1/2 tsp garlic granules 2 Tbs tahini Place the cornstarch in a 1-quart saucepan, and stir in the soy sauce to make a smooth, thin paste. Gradually whisk in the water and garlic granules. Place the saucepan over medium-high heat, and cook the gravy, stirring constantly with a wire whisk, until it thickens and comes to a boil. Remove the saucepan from the heat, and beat the tahini into the gravy using the wire whisk. Serve the gravy at once, or cover the saucepan with a lid to keep it warm. Stuffing is pretty easy to make vegetarian. Basic stuffing is a combination of bread cubes/crumbs, veggies and moisture. Don't use eggs. Here is an easy fall dessert I just had the other night ~ Baked Apple 1 (or more) Golden Delicious or your favorite apple, cored Little bit of honey and cinnamon in the center Microwave for a couple of minutes. I could do this, substituting agave syrup for the honey: Baked Apple 1 (or more) Golden Delicious or your favorite apple, cored Little bit of honey and cinnamon in the center Microwave for a couple of minutes.
