Guest guest Posted October 19, 2006 Report Share Posted October 19, 2006 Last night I made some cornbread (from scratch), using cornmeal, flour, a little oil and egg substitute, etc. (recipe on cornmeal box) and low-fat soymilk instead of the regular milk. It tasted BAD!! I checked my flour and cornmeal and they seemed fine. Was it the soymilk that made it taste bad?? What should I use next time? Is rice milk better for baking? I've been using soya milk (low fat, full fat, sweetened, unsweetened, added vitamins, you name it) for 30 years in baking with no problems. Having said that, I've never made cornbread, but I regularly bake scones, cakes, pastries and battered puddings completely vegan. Try a different soymilk? But yes ricemilk should be OK too. Soy milk can go bad more quickly than regular (cow) milk, so taste it before using it. Was the sweetness of the recipe off? I usually use unsweetened soy milk for everything, so that it doesn't throw off taste. Personally I have never had a problem lately, but when I first went veg in 1983 I had to learn alot about soy milk.
