Beth, That's not much food. I dosn't mean to be telling you what to do but

where's the vegetables.

the taco filling had lots of salsa & topped with lots of lettuce tomato & more

salsa. most nights i serve 2 veggies. today was...ummm..off a bit. we were

going to have bagel pizzas for lunch but it got late so we just had an early

supper.

Speaking of tacos...

We've made Summer Veggie Tacos a few times. Here's a pic of one time

You can use whatever veggies are in season ~ we usually saute some zucchini,

squash, bell pepper, onion, etc and then use also use stuff like corn, green

onion, cilantro, etc. Sometimes I'll use some chipotle chili powder in the

saute. They're different every time. We use a 1/2 cup of beans for 2 tacos.

We've been using great 1 point corn tortillas from our farmers market. Most

times they end up more of a tostada than a taco as there are so many yummy

veggies to add!

Before we found that idea, we would use soy crumbles warmed with salsa then

lettuce, tomatoes, cilantro, etc as toppings.

 

I hear ya about those off days! Sometimes I eat a bunch of fruit & veggies,

other days there's hardly any...

Okay, that sounds good. Didn’t mean to pick on you but I just went into “mom

mode” for a moment. LOL Sorry.

Hey Beth,

Sorry to ask such a dumb thing but how do you make a bagel pizza?

I love pizza and so I seen this and just had to ask since it seems ike an

answer to how I can eat pizza with out over doing it.

these were frozen things from the supermarket but really easy to make - 1/2

bagel = pizza crust, top as desired & bake until hot. Never a dumb question.

You're right. we had 4 children, so I am more likely to make my own food

instead of getting frozen already made stuff. I guess it comes from habit,

veggie pizza sounds yummy. Judy H
