Happy Monday! What's for lunch?

Hey everyone ~

Happy Monday. Hope you all had a nice weekend. Anybody have anything special

in mind for lunch or dinner today?

For lunch I will be having leftovers from last night, a slow cooked ziti

casserole, and for dinner I believe we're having sweet glazed tofu cutlets.

Although I forgot my lunch and fruit when I left for work so I guess I'll be

going home for lunch today. Which is ok as my partner is home ill so I can

check on her at the same time. Guess it worked out ok after all! :-)

We had spaghetti for dinner last evening so for lunch today I took the leftover

spaghetti sauce (about 2 cups), 4 cups of veggie broth, and some leftover canned

corn and threw it into a pot for an easy " spaghetti soup " . When it's all warmed

together, I'll throw in the leftover spaghetti noodles. The hubby will sprinkle

some parmesan on top. I do not since I am vegan. Quick and easy.

Wow that's pretty inventive! A good way to use leftover noodles as they usually

don't keep well on their own.

there was a weekend? poo, I missed it. Just a weeee bit busy around here!

brunch as usual was leftovers for me. nothing terribly exciting or noteworthy.

except for the chili-tomatillo chutney which I will try to remember to post

eventually. It was an experiment & OMG is it ever DEEEELICIOUS.

Lunch was left overs from a crockpot dish I made Sunday.

 

Fresh from the vegetarian slow-cooker.

 

It is the one with navy beans, carrots, potatoes and cabbage with seasonings.

It is probably a bit tame for most of you, but since food doesn't like to stay

in my tummy, but rather " swim up stream " as my husband calls it. Spicy food,

peppers, etc... doesn't work well for me.

Actually, this sounds quite yummy! I make a cabbage soup too - with

white cabbage, potatoes, carrots, onions (or leeks), and sometimes a

bit of celery:) I've never thought of putting in navy beans! I'll

have to try that some time!
