Healthy Egg Salad recipe anyone?

I'll be starting school next week and plan to bring my lunch. Does

anyone have a healthy egg salad recipe they can share? Possibly cut out

some of the mayonaise with a healthier substitute?

Susan asked about a healthy egg salad recipe.

 

 

 

Substituting soy-based mayo would be one step in the right direction.

Adding more veggies to the salad would also help. Here is a recipe using

soy, but it could be modified to use egg, maybe with even less mayo.

 

 

 

Eggless Salad

 

 

 

1 pound firm tofu, patted dry

1/2 cup soy mayonnaise

1-1/2 teaspoons lemon juice

1 teaspoon onion powder

3/4 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon turmeric

1/8 teaspoon freshly ground black pepper

1/2 cup carrots, shredded

1/2 cup red bell pepper, diced

1/2 cup celery, diced

1/4 cup green onions, sliced

1/4 cup freshly chopped parsley

 

 

 

Wrap the block of tofu in a clean, lint-free towel, place in a colander, and

balance a large plate over the top of it. Place a large can or something

heavy on top of the plate and leave the tofu to sit for 30 minutes (be sure

to put the colander in the sink or place a bowl beneath it to catch the

excess water). This pressing technique makes the texture of the tofu much

firmer. When done, use your fingers to crumble the pressed tofu into a bowl.

Add the soy mayonnaise, lemon juice, onion powder, garlic powder, salt,

turmeric, and pepper, and stir well to thoroughly coat the tofu. Add the

carrots, red pepper, celery, green onions, and parsley, and stir well to

combine. Cover and chill for 1 hour to allow the flavors to blend. The color

of the eggless egg salad will turn more yellow as it chills.

Tofu Egg Salad

Amount Measure Ingredient -- Preparation Method

2 Packages Tofu, Firm -- squeeze out all excess liquid

1 Bunch Scallions

4 Stalks Celery

4 Tablespoons Bill's Best Chik'nish

2 Tablespoons Nutritional Yeast Flakes

1 Teaspoon Garlic Powder

4 Tablespoons Vegenaise

 

Slice scallions real thin and cut celery in 1 inch pieces.

 

Put all ingredients in food processor and process for about 2 minutes.

 

Spoon onto bread or finger rolls. Garnish with small slices of

scallions or fresh parsley.

 

It's great in a sandwich on whole wheat or multi-grain bread.

 

If you have fresh tomatoes, cut a whole tomato in quarters, but not

all the way to the bottom. and place a scoop of the salad in the center.

 

Both are quick meals that are low fat and taste great.

You can find Bill's Best Chik'nish Seasoning at www.billsbest.net

 

This is a vegan seasoning with no MSG and is non GMO.
