Salad doesn't have to be just veggies our family loves to make taco salad from TVP. I would limit it if you are dieting since we use corn chips. Have fun. With all the different greens you could eat a different salad every day. Baked / grilled / fried Tofu is a nice addition, you can also toss in some of the veggie meat substitutes.....the " chicken " or " steak " strips, even veggie burgers cut up into pieces. Rice and other grains.....cold or warm....I love a spinach salad with brown rice, veggies and a little cheese. Pretty much any vegetable.....raw or cooked. The list is endless. Sweet potatoes.....I cook one in the microwave, let it cool and then cut it into chunks. Any kind of nut or seed would work, fruit is a nice addition as well. Guest guest Posted January 8, 2009 Report Share Posted January 8, 2009 I love any kind of beans, especially kidney beans or chick peas on salad, and I love salads with lots of fresh vegetables on it.....and different kinds of greens.....which my husband refers to as " weeds " .....so funny. I also like to add pine nuts, dried cranberries, sliced almonds or walnuts. Sounds good to me! You are so lucky to have a mother to have dinner with once a week. I would give most anything to be able to have dinner with my mother just one more time. She died September 18th, 1984 at only 58 years of age. I was 36 years old. She was my best friend and the smartest woman I think I ever knew.......and she loved me and my children so. I wish I could have her back......and now my 21 year old granddaughter is with her. I wish I could have them both back. Enjoy your mother while you can.....you never know when you may not have the opportunity to eat dinner with her ever again. Guest guest Posted January 8, 2009 Report Share Posted January 8, 2009 LETTUCE, BEETS AND FRESH FIGS SALAD Recipe repost. I made this with fresh figs and it is great. I plan on trying it soon with thawed frozen figs (maybe marinated in balsamic and honey and chopped smaller?). In any case, it is very good. Lettuce leaves, enough for a large salad bowl. Beet leaves (from one beet) 1 medium red beet, peeled and grated 4-5 fresh green figs, quartered (I used the large green type) goat cheese 2 oz, crumbled olive oil salt balsamic vinegar lemon juice honey to taste freshly ground pepper toasted walnuts tony chachzarades (sp?) or creole spice mix Wash and break lettuce and chop beet greens. Marinate grated beets in balsamic and lemon juice adding a tsp tony schazarades creole seasoning. Save marinating juice. Layer lettuce leaves on a plate and top with chopped beet greens. Add salt and olive oil. Follow by grated beets, and spread fresh figs around. Add honey to beet marinade (it should be dark pink) and drizzle over figs. This makes a beautiful pink spot over each fig. Sprinkle goat cheese and walnuts around. Grind fresh pepper on top. Quote Link to comment Share on other sites More sharing options...

Any way there are pasta salads, taco salads, bean salads, fruit salads, I sometimes have a bean salad or pasta salad mixed with my lettuce salad. You could put beets in your salad, different kinds of cabbage we like Napa, I also like to shred some parsnip into my salad, jicama is also great in salad. You can very the veggies to get a different salad. I also like to add dried cranberries, blueberries and sometimes papaya, walnuts, almonds, cashews, and different kinds of seeds. I got a salad that had pumpkin seeds, sunflower seeds, rasins (purple and green), purple grapes, dried cranberries, walnuts, feta cheese, apple wedges.......(I can't remember everything!) all on top of a bed of mixed lettuce, spinach and some other greens. My mother in law fixes a salad with manderain oranges, pecans and sunflower seeds. Be creative and try new things.
