Guest guest Posted February 20, 2007 Report Share Posted February 20, 2007 1 pound fresh asparagus, trimmed 3 cups water one pie crust 2/3 cup Swiss cheese divided 4 eggs lightly beaten 3/4 cup half and half 1/8 teaspoon cayenne pepper 1/8 teaspoon nutmeg Stem the cut asparagus for 2-4 minutes drain and pat dry. On a lightly floured surface roll out the pie crust and press into the bottom of a pie pan trim excess crust. Place the asparagus on bottom with half of cheese. In a bowl add spices, eggs and half and half and pour on top of asparagus. Bake at 400 degrees for 25-30 minutes Let cool 10 minutes before cutting 233 calories 1.5 grams of fat 8 grams protein Be a PS3 game guru. The recipes serves 8 (eight) - and as for the fat content it was just a matter of a decimal point Not 1.5 g but 15 grams of fat. FYI the info is here http://www.rd.com/content/openContent.do?contentId=26471 and tells us as follows: Nutrition facts: 1 piece equals 233 calories, 15 g fat (7 g saturated fat), 132 mg cholesterol, 326 mg sodium, 16 g carbohydrate, 1 g fiber, 8 g protein. Diabetic exchanges: 21/2 fat, 1 starch, 1 lean meat. Generally, we suggest low-fat ingredients, and it would have been the full-fat cheese and the half-and-half 'cream' that drove that fat count up - not to mention the eggs, of course. *sigh* Not fair, is it?
