I have a recipe for kale 'chips'. I'm trying to make this interesting for my kids too. Does anyone have a really good recipe using brussel sprouts? If it's mixed with other veggies thats ok too. I usually just steam Brussels sprouts (trim first and cut a little X in their stem ends) and serve with a squeeze of lemon juice. But sometimes I halve or quarter them lengthways and stir-fry them quickly with a little onion and chiles and then sprinkle with a little Tamari. You can also stir- fry them with a little tofu and other vegetables (mushrooms, onion, perhaps water chesnut, red bell pepper, whatever) and mix an asian-style sauce for them (a little Tamari or soy sauce, corn starch, water). I've done this many a time, but I don't have it written down as a recipe since I do it a little differently every time, sometimes using hot chile paste in the sauce, sometimes using ground peanuts or peanut butter instead, sometimes both. There are lots of ways of cooking Brussels sprouts without using either oil or butter in excess of what you want on this kind of diet Some members have had great success roasting them in the oven with just a quick spray of cooking spray (like Pam), letting them brown or caramelize a bit (which sweetens them). You can do a mix of veggies like this in a layer in an oven tray, but someone else who does it should give you the correct instructions! They're lovely.
