Hi Kathy and welcome to our group!

 

I think it's great that your children are vegetarian!

 

I too enjoy cooking and trying out new recipes. You've been a vegetarain for

quite some time now, got any favorite low-cal/slimming recipes you'd ilke to

share with the group?

My current favorite recipe

 

Tango Mango Salsa

 

1 ripe mango, coarsely chopped into 1/2 inch cubes

1 1/2 cups coarsely chopped pineapple

1/4 cup paper thin slivers of red onion

Juice of 1 lime

2 jalapenos, seeded and minced

8 basil leaves, shredded

4 to 5 shakes of hot sauce

 

Toss ingredients together gently in a bowl and service immediately.

 

I enjoy this with everything especially grilled vegetables.

My DS totally freaks out when he sees people eating meat.

 

In the fall he went to a Cubs event that they hadn't told me there

would be food at. They had hot dogs and he just blithely assumed that

they were veggie dogs, because that is all we ever have. Well he took

two bites and just about threw up. He was so disgusted that he had

eaten an animal. (And no, we have never taught him intolerance where

meat-eaters are concerned, and freely admit that we ate meat when we

were younger.) Whenever he goes on a field trip or to a class where

they discuss carnivores, omnivores, and herbivores, he is quite

insistent that he is a herbivore, not an omnivore.

 

Of course the only other things that they had to eat were pop, chips,

and cupcakes and candy. He can't have dyes so his lunch consisted of

a can of Sprite and two bags of chips. Needless to say he did not

feel well when he got home!

Mmm. My son is on a real mango kick right now. Just about had a

complete melt-down last night because I wouldn't stop at the grocery

store on the way home to get more dried mango. I wonder if the hot

stuff in this recipe would weird him out.

This one was just a fluke because of the mangoes.

There's another version of this salsa - Lots of grocers sell it here in TX.

It's Pineapple Mango Salsa - diced pineapple, mango, red onion, jalapeno,

cilantro, and lime juice. You basically can ratio the ingredients to taste, and

you could do bell pepper rather than jalapeno if you don't want the heat...it's

a semi-sweet salsa as is, and we love it on black bean tacos. My youngest

(non-veg) son likes it on grilled mahi-mahi tacos. We find it lends itself

better to corn tortilla tacos rather than white flour. I've figured out how to

bake the corn tortillas in my oven, so no fat there:)
