Guest guest Posted March 12, 2007 Report Share Posted March 12, 2007 okay so it's a terrible pun but having read mentions of nutritional yeast in recent posts here, I'd like to know if anyone can tell me more about it, and suggest some ways to use it. I bought some a couple of years ago (during a dieting phase) and never have quite gotten around to doing much with it except sprinkling a tiny bit over hominy grits (reminds me of cheese but taste is unpleasantly strong). What I am noticing is that most of the recipes I'm using it in, only calls for 1/4 c. of the stuff. I just posted a baked seitan recipe that calls for it, and I don't even detect it in there. It can also be added to tofu scramble - it makes the texture more egg-y. Use 1/4 c. to one block of tofu. It should be added at the very end of the cooking/seasoning process. If it seems too dry, sprinkle with a little bit of water to get the right consistency. If you don't already own a copy, " Vegan with a Vengeance " is a MUST have - I've been cooking from it for two weeks now and I LOVE it!!
