okay so it's a terrible pun :) but having read mentions of

nutritional yeast in recent posts here, I'd like to know if anyone can

tell me more about it, and suggest some ways to use it. I bought some

a couple of years ago (during a dieting phase) and never have quite

gotten around to doing much with it except sprinkling a tiny bit over

hominy grits (reminds me of cheese but taste is unpleasantly strong).

Thanks for any hints, tips, clues.

The first time I tried it (a couple years ago) I hated it. BUT - I've

recently started craving it!

 

What I am noticing is that most of the recipes I'm using it in, only

calls for 1/4 c. of the stuff. I just posted a baked seitan recipe that

calls for it, and I don't even detect it in there.

 

It can also be added to tofu scramble - it makes the texture more egg-y.

Use 1/4 c. to one block of tofu. It should be added at the very end of

the cooking/seasoning process. If it seems too dry, sprinkle with a

little bit of water to get the right consistency.

 

If you don't already own a copy, " Vegan with a Vengeance " is a MUST have

- I've been cooking from it for two weeks now and I LOVE it!! She uses

nutritional yeast in a number of her recipes - like Garbanzo bean gravy,

for one...excellent on mashed taters!!!

Most vegan cheese replacement recipes use nutritional yeast. We have a

number of recipes like this in our files. The category says Fakes or

something like that.
