I've just been distracted and busy. I've achieve part of my goal to

get off the thyroid meds. I'm off one of the two! I've also lost

another pound or so: 185.6 now. I stopped logging my food in fitday

and here but I've been keeping to a healthy veggie diet.

 

I did try one thing that I want to share. I had a can of Campbell's

Cream of Squash Flower recipe select soup in the pantry leftover

from before I returned to vegetarianism. I used to follow the

recipe on the can and make a kick-ass chicken dish. The soup

has " less than 2% " of whey and less than 2% of chicken solids in it

so it's not vegetarian but I'm not going to sweat " less than 2% " .

Anyway, it was already in the pantry so why not use it up. I used a

package of tofu instead of the chicken that the recipe called for.

I froze the tofu, then thawed it and pressed all the water out of it

that I could. Then I sliced it into pieces from the short side. I

put just enough vegetable oil in the cast iron skillet to be able to

fry the tofu (not deep fry, though) and heated it up. Salt and

peppered the tofu and then dipped the slices in unbleached flour and

then fried them until golden brown with a nice crispy crust. Then I

mixed the can of soup with 1/2 cup plain soymilk and poured that

over the tofu and heated it until it was hot throughout. I served

tofu and sauce over brown rice and it's was still a kick-ass dish!

The tofu worked maybe even better than chicken would since it

absorbed the flavor of the sauce into it. We had a mixed veggie

salad with it and it was an awesome meal. My omnivore husband went

back for seconds!

 

If you can let go of a bit of veggie pure-ism and tolerate " less

than 2% " of animal products, I highly recommmend it.

Alternatively, you could find another brand of " Cream of Squash

Flower " soup or make your own and use *that* in the recipe. ;)

Good advice, Erin.

 

" Veggie purism " has nothing to do with it. Strict vegetarians and

vegans do not " tolerate less than 2% of animal products. " One can eat

eggs and dairy, and be lacto-ovo vegetarian. However, if you eat any

form of living creature flesh, you are not a vegetarian.

That's good - we missed ya! :) And I'm so very pleased that you are able to cut

down on

your meds - congratulations! And congrats too on losing those pounds - never

easy for

anyone, no matter what they say (well, easier for some, maybe, but rarely a

breeze LOL).

How could that you've been able to keep to " a healthy veggie diet. " I am sure

that's what

makes the difference for you! Good work.

Okay, hon, we all make the decisions we need to make in life - and

we understand that sometimes one falls off the veggie wagon now

and then in the early stages of going veggie. When that happens,

you just shrug and forgive yourself and carry on as if it hadn't

happened - a bit like falling off a weight-loss diet (although of

course quite a different thing). Just carry on now, without the meat,

okay? Hugs.

I don't think so. Posting recipes or recipe ideas that contain meat -

whether solid or liquid, whatever percentage - is against our

Guidelines. We understand the temptation to eat these things, but

please don't write to describe the meal and tell us how good it is,

okay? Cuz some people who are new to giving up meat might find your

otherwise delightful recipe suggestion a great temptation. There

are veggie alternatives out there. I'm sure you understand, and

know that we attach no criticism or blame to you.

 

Sooooo, what's your next goal? To get off all your meds entirely? Lose

more weight? Do you have a specific goal - target date - whatever - in

mind? Maybe you're told us about that already, but you are doing so

very well that maybe your goals have shifted a little?

 

Chat again later. My oven timer has just gone off and I must take my

bread out of the oven! Smells absolutely lovely . . .

Sorry about upsetting everyone. I hope everyone can make their own

decisions about tiny bits of " unacceptable " ingredients, especially

in

using up relics in their pantry.

 

My goal is still to get off all the blood pressure meds. I have a

loose goal of getting down to 160 by mid-August, which at the time I

set the goal meant loosing about a pound a week. I'm ahead a bit on

that but I'm about to hit a big snag. I have two " suspicious "

nodules

in the left lobe of my thyroid gland, among lots of other nodules

that

are too small to test. A needle aspiration lead to the diagnosis

of " suspicious " . There's something odd about the nucleus' in the

cells they extracted. The next step is to remove that lobe of the

thyroid and examine the nodules through a frozen section. They

can't

just remove the nodules (the largest is just a centimeter and a half

in size.) If the nodules are malignant, they're going to assume

that

the itty bitty nodules in the other side are too and they'll remove

that lobe too. The examination of the nodules will take place while

I'm still out on the operating table. I'll wake up with 1/2 of a

thyroid gland at best or no thyroid at all. That's going to mess up

my metabolism for a while. If I have 1/2 of the thyroid still

there, it may start making more hormones to compensate for the

removed half. It may not and I may have to be put on thyroid

hormone. If the whole thyroid is remove, I'll definitely be put on

hormones. So I guess my strategy is shifting to getting through the

next few weeks. The surgery is scheduled for April 24th. I've got

a lot of time to worry about it in the meantime.

Good for you - my dh is working towards that too. He is now on half the

bp meds he was on before (for years and years) as of this month. He

monitors his bloodpressure at home and it is still going DOWN! The doc

is likely to get a surprise when he checks in with her again :) We're

working on it through diet, of course.

A pound a week is sensible, isn't it! Well chosen goal, I'd say.

Hon, I'm so sorry - what a worry for you - other than that, I can say

nothing useful at all, I'm afraid. It's a wait and see situation, eh?

That's hard, the waiting for that long a time. Be kind to yourself. And

know we'll be sending your lots of love now and on April 24th.
