Are you able to grow your own produce or do you just have animals on the land? I understand about being tied to the kitchen. I'm sure we have some quick fix recipes in our files section if you'd like to take a look. Can't get the boys to help you out with the prep to ease your kitchen burden? Do the people whose homes you visit know your dietary preferences? My partner and I have the same issue when we go to one of her relative's houses for dinner, although a couple have started being a little more aware and have something more than just salad for us. I tent to snack before we go though, just in case! :-) Again, welcome to our group and good luck on losing the weight and finding the time to exercise! Guest guest Posted March 27, 2007 Report Share Posted March 27, 2007 We grow our own produce. We had cows, sheep and chickens until last year, but now it is just pets and horses. The boys do help in the kitchen. My oldest especially like to make pancakes in the morning. However, figuring out what to make for dinner is a challenge. It just always seems hard to find the amount of time needed to cook vegan in the evening. As far as cooking goes I miss begin able to pull a meal together quickly. I do freeze some meals ahead and I try to keep some of my common ingredients made ahead ( " cheeses " and such). I would like to find more good crock pot meals. My husband has a very physical job and it always seems to be a challenge to keep him fed with out over feeding myself My family is aware of my dietary preferences, but are not that interested in changing their cooking styles. Guest guest Posted March 27, 2007 Report Share Posted March 27, 2007 How neat to have a farm. 12 years ago, when I married my husband and moved up to Canada, we were contemplating buying a hobby-farm. I remember my husband telling me at the time that if we had animals living with us like that, I would probably never be able to eat one again. I thought, " NO WAY! " Boy have things changed! This is just one idea based on what you wrote. Have pancakes for dinner and your son can help! I always make my pancakes with whole wheat flour anyways but there are endless possibilities with them. Try using whole grain flours that are higher in protein and fiber. Add seeds and nuts to them. I love whole wheat pancakes that have corn and dill in them. Mind you, I find that when I use the whole grain flours, I need to add more liquid. Make a thinner pancake and roll up a filling in it. How about a cornmeal pancake with a crockpot vegetarian chili rolled in it. There are endless possibilities. My sister has two girls, 12 and 8, that have been vegetarian since conception and I have so much respect for how she encourages them to help in the kitchen. They always make the salad. Saturday night I spoke to my Mom and she had just come from their house where the girls fixed everyone (about 8 people) dinner themselves. They made homemade lentil soup (the eldest's " specialty " ), Corn muffins, a big salad, and apple crisp for dessert. Sounded very yummy to me.
