I just came across this really cool website and thought I would

share it with all of you. It's http://www.theveggietable.com/ and

they have tons of recipes. I think tonite I might try the Black bean

soup.

 

Black Bean Soup

 

This spicy, garlicky black bean soup is hearty enough to stick to

your ribs!

 

Yield 6-8 servings

Time 45 minutes + bean soaking/cooking

Tools skillet

wooden spoon

rubber spatula

blender or food processor

Dutch oven or large saucepan

 

Ingredients 1 T olive oil

3 c chopped onion

2 t cumin

2 t salt

1 medium carrot, diced

10 cloves garlic, crushed

1 bell pepper, diced

5 c black beans, soaked and cooked

1½ c orange juice

black pepper

cayenne pepper

2 medium tomatoes, diced (optional)

Optional toppings

 

sour cream or vegan sour cream

cheddar cheese, grated

red or green onion, diced

cilantro

sliced avocado

salsa

 

Directions Sauté the onion, cumin, salt, carrot, and half the garlic

in the olive oil over medium heat, until the carrot is tender. Add

the bell pepper and the rest of the garlic and sauté until

everything is very tender, about 10-15 minutes. Transfer to the

Dutch oven along with the cooked beans.

Mix in the orange juice, both peppers, and the tomatoes. Optionally

purée some or all of the soup in the blender, then return to Dutch

oven.

 

Simmer over low heat for another 10-15 minutes, add toppings, and

serve. If you prefer a thinner soup, add a cup or two of water and

simmer until hot.

 

Thought it looked really tasty!

There are many good vegetarian sites, including theveggietable :)

So thanks for that!

But remember that it is not a low-fat site, and a couple of the recipes

I just found there, among the first few listed, would be wayyyyy off

topic for this group and unsuitable for anyone who is trying to

restrict their fat intake. However, the recipe you have chosen -

is okay - as long as you skip the _fatty_ toppings. Do please let

us know how it turns out so that we can add it to our Files section.

(We only post 'tried-and-true' recipes here.) Good luck - I'll look

forward to hearing more about it!

I know its not all low fat, but I know like many of you that I alter

recipes to fit what I am looking for. I kinda just take the recipe

for " guidelines " as to what " could " go in. I do it a lot with

recipes that aren't entirely veg. Take out what you don't want and

replace it with something healthier or veg. I mainly just liked a

lot of the flavors and ideas that went along with most of the

recipes I skimmed over. Believe me, I am not trying to make anyone

go off a diet! :o)

I know exactly what you mean - few recipes survive in their original

form once they hit this household LOL Good for you to be able to

be creative in that way - I look forward to seeing some of your own

recipes too :)

 

And no, didn't think you were trying to corrupt anyone and seduce

them off their 'diets' - just a pro forma caution in case a newbie

thought that a recommended recipe site on this group was of

necessity a low-fat site (such guidelines being part of my 'job' here).

 

Btw, do you know http://blog.fatfreevegan.com/ and

http://www.fatfreevegan.com/ ??? They don't have any fat whatsoever

or any eggs or dairy, of course, but you should be able to adapt the

recipes to your own style of eating. Highly recommended. There are

others too - I'll look them up after a night's sleep.
