I brought leftover salad we made last night with spinach, arugula, green leaf lettuce, radish, carrot, sunflower seeds, craisins, sprouts and shaved parmesan. Yum! I may add a little baked tofu I keep here in the office for snacking. Not sure yet. Mid afternoon snack will be an apple. But hubby came by with DS for lunch, so we had pizza. Oh well. I blotted mine, and only had one piece, didn't have any pop, and still have some healthy snacks should I get hungry before going home. And I've been drinking my water and had all-bran for breakfast! Guest guest Posted April 26, 2007 Report Share Posted April 26, 2007 The plans are: a big salad of romaine and red leaf, with tomato, carrot, maybe some bell pepper, dressed with some leftover oil-free chickpea salad and some hummus, a drizzle of balsamic vinegar and some nutritional yeast. Then probably an apple or an orange for dessert. Maybe not the most healthy but it's better than what I'll have for dinner. My daughter's school is going bowling 4-7pm therefore I'll eat whatever they have that is vegetarian. We've also been getting a great variety of greens in our produce deliveries these past couple of weeks. Today the bosses needed a quick lunch meeting before leaving town, so I took my lunch out of the microwave and put it back in the fridge, and out we went for Chinese. I had Mongolian Grill (stir fry veggies and a few noodles), a small amount of rice, a spring roll, and tempura vegetables (buffet!) For dessert I had fruit. Water to drink.
