Other than that, no meat. My boyfriend is not vegetarian, but he likes vegetarian food. How long veg: 1 1/2 years This week's dinners: Greek salad tofu and veggie stir fry with green curry white beans and tomatoes in crock pot (with sun dried tomatoes and pesto) Thanks everyone for your recipe ideas! Went veggie a couple of decades or more ago but gave up dairy and eggs more recently. Week's menu? Not decided yet LOL We're not that organized, I'm afraid. But today we finished off a Nigerian Chickpea Stew With Peanut sauce - see here: <a href= " http://beanvegan.blogspot.com/2007/05/nigerian-chickpea-stew-with- peanut.html " >http://beanvegan.blogspot.com/2007/05/nigerian-chickpea-stew-with- peanut.html</a> We had it with an apple, celery and baby spinach salad, some leftover Swiss chard from yesterday (wonderful!) and brown rice. We were able to get another bunch of chard at the market this morning, which is lucky - last one they had. I think tomorrow I might make a squash and broccoli lasagna, using a faux bechamel (subbing tofu) for the top. We don't bother with faux cheez anymore. Other than that, I can't think! LOL Not all are low-fat, but my favorite lunch would be my bean and rice burritos. And yesterday I made pizza on pita bread with a bit of veggie sausage, onions, peppers and seasonings. Yum! One can always climb right back on, which it sounds like you did. :-) Your menu sounds fantastic ~ a lot of variety in there. Eating out is very difficult as a lot of restaurants don't have a huge variety of vegetarian options up here. It can be done, though. The longer I eat vegetarian, the less I crave non-veggie foods!
